Effortless Meal Prep for Two: Cook Once, Enjoy Twice with This Simple Technique






Grocery List and Total:

  • 4 Pork Chops: $6.34

  • 3 Ears of Corn: $0.99

  • 1 Can of Green Beans: $0.97

  • 4 Small Potatoes (about 1 pound): $0.63

  • 3 Small Homegrown Onions: $0.25

Total: $9.18 (less than $2.50 per meal)

Optional items, common spices, butter, and oil are not included in price


Meal Preparation and Breakdown:

First Night's Dinner: I pan-cooked a small package of pork chops, seasoning them with an all-purpose blend. To enhance the flavor, I added a few small onions to the pan, which also served to flavor the green beans later.

I opted to bake the corn and took the opportunity to roast the 4 small potatoes at the same time, which I'll use for a future meal, minimizing oven use.

In a small pot, I heated the drained green beans with a touch of butter and mixed in the cooked onions from the pork chop pan.


Dinner Menu:

  • Pork Chop

  • Ear of Corn

  • Green Beans with Sautéed Onions


Second Night's Dinner: We enjoyed the leftovers, which included:

  • A Pork Chop, optionally topped with Lemon Rosemary Pear Jam

  • Half an Ear of Corn per Person

  • A Small Baked Potato with Butter, Salt, and Pepper


The remaining two small potatoes were used in breakfast scrambles throughout the week.
